I traveled to Puerto Rico December 2017 to visit some cacao producers and check out the chocolate landscape. Like most cacao producing countries Puerto Rico is HOT so there are a lot of logistical challenges for all the chocolate makers on the island. It's difficult to find a chocolate bar that is sitting in a refrigerated store. Given that most of the island had been without electricity for the past few months ... an air-conditioned store full of tempered chocolate bars was an ignorant ask.
So I kind of let go of the idea of chocolate on the island and went towards the cacao. Most of the trees had been wiped out by Hurricane Maria but I was able to connect with a farmer that had stored some of his cacao from his February harvest. Most of his trees were gone and he only had two small sacks of dried cacao beans from February.
I brought one of the sacks to Brazil and was able to make some great chocolates. I had never worked with Puerto Rican cacao and I was very surprised and pleased. I decided to send all the chocolate to the Puerto Ricans - sending the cacao back to its home. It only seemed fair that the people that actually grew the cacao have access to the chocolate.
