These beans come from the Camino Verde farm in Balao, Ecuador. Greg, Chiann and Pearl visited this farm in May and were impressed by the careful and methodical way the farm operates. Vicente Norero, the owner and general manager, is committed to a process that respects the soil, controls water consumption, utilizes bio-fertilizers, provides traceability of its trees, and achieves optimum fermentation and drying of beans. We really like the tannic start and almond-butter texture of this pure, bold, chocolatey bar. We felt these beans tasted good enough to stand on their own, it is purely 100% ground cacao, there is no added sugar, cocoa butter, lecithin, or vanilla. 2oz (56g).

Currently in their factory in the Mission district of San Francisco, they roast, crack, sort, winnow, grind, conch, and temper small batches of beans and then mold and package each bar by hand. By sourcing high quality beans and carefully crafting tiny batches, they try to bring out the individual flavors and nuances of each bean.
