Quinoa con leche is a combination of my love for rice pudding and my desire to be healthier. At first I wanted to go 100% healthy pudding but it was so bad. I tried this recipe with sugar, honey, agave, and stevia and they all do well. I also tried it with almond milk but couldn’t seem to create the thickness that I love in rice puddings and it had a strange taste. So, I would suggest using water and coconut or dairy. The texture might not be for everyone but it’s certainly worth trying at least once. Remember you always have control of the sweetness level.
Quinoa con leche recipe
time 20-30 minutes. Serves 2-4
1 cup quinoa
1 cup of water
1 ceylon cinnamon sticks (or 2 teaspoons of cinnamon powder)
5 cups of milk
½ cup of sugar
1 small piloncillo (optional)
1. Boil on medium heat: quinoa, water and cinnamon until water is absorbed. Add 4 cups of milk.
2. When the quinoa reaches your desired consistency remove from the heat and add 1 cup of milk.
3. Let cool and enjoy warm.
